Chile Verde

Chile Verde is a sweet, spicy salsa that is made most commonly with tomatillos and a number of different green chiles.  This salsa goes well with chicken, pork and fish, and can be used as a topping for burritos, tacos, tamales, etc.  The tomatillos provide a great sweet and sour flavor that I like a lot.  Depending on how smooth you wish to puree the sauce, you could create a thicker version that would be great as a salsa dip as well.


Chile Verde
(Makes about 3 cups)

Ingredients:

  • 1 lb tomatillos, husked and quartered
  • 3 garlic cloves, minced
  • 1 jalapeno, seeds and ribs removed, chopped
  • 1 Anaheim chile, halved
  • 2 poblano chiles, halved
  • 1 lime, juice
  • 1/2 small onion, chopped
  • 1 bunch cilantro leaves, cleaned and chopped
  • salt and pepper to taste

Directions:

  1. Place the tomatillos, poblano, anaheim, and jalapeno peppers on a baking sheet with the peppers’ skin side up.
  2. Broil the tomatillos, and peppers until the skins are slightly blackened and peeling.
  3. Combine all ingredients in a blender and puree.
