This is a simple and easy condiment that can go on almost any taco, burrito, or tex-mex dish. The salsa is fresh and clean with just a hint of olive oil. It would go great with chips as well.
Cilantro and Lime Salsa
(makes about 2 cups)
- 1 white onion, diced
- 1 large handful cilantro, chopped
- 1-2 limes, juice
- 2 tsp olive oil
- salt and pepper to taste
- In a bowl, combine all ingredients. Set aside in the refrigerator for 20 minutes before serving.
