Chipotle Cherry Salsa

I recently came across a recipe for chipotle cherry salsa and I was automatically intrigued.  The combination of sweet, spicy and smoky made me so excited to give it a try!  The only time consuming part was removing the pits from four cups of cherries.  It turned out to be well worth it as the salsa was everything I thought it would be: smoky/spicy from the chipotle and sweet and fruity from the cherries.  There’s also a hint of balsamic vinegar that adds another dimension to the salsa. It was a combination that worked out great for the Steak Tacos.

Chipotle Lentil and Bean Chili

October and November, in my opinion, are the best months for soups and chilis. I can’t really get enough of a warm bowl of something tasty during these months.  Since I had quite a few leftover ingredients from other meals (e.g. lentils, beans, tomato sauce, cilantro, etc) I figured I should try creating a chili out of what I had sitting around.  I kept looking around for more things to throw in and noticed I had some frozen green peppers and jalapenos, so I cut them up and threw them in too.  I was very happy with how the chili turned out! This chili does not need an ounce of meat as it is packed with protein from the lentils, kidney beans, and pinto beans.  The ground chipotle chilis were great and gave it a more smoky, aromatic flavor.  I garnished the chili with sour cream and cilantro, but yogurt would be a good substitute for the sour cream.

Chipotle Corn Chowder

This is not the typical creamy corn chowder but a spicier, smokier corn stew. Unfortunately the season for good, fresh ears of corn has passed so I settled with store-bought bags of sweet corn. This recipe is perfect for sweet corn season and makes a great summer/fall soup. A fresh jalapeno is a good flavor addition to the smokey chipotle chili powder. I had some green bell peppers so I added those in for some extra veggies. I balanced the spiciness by adding sour cream and cilantro for garnish.
