Honey Mustard

Curried Chicken with Honey Mustard Glaze

This chicken is great for panini sandwiches but also very good on it’s own. Honey and mustard is a classic combination, and a little curry was a nice addition to the glaze. Broiling the chicken for a few minutes kept it nice and tender while the honey caramelized a bit around the edges. I’ve made this recipe before using a saute pan and that turned out well too.

Curried Chicken with Honey Mustard Glaze
(Makes 2 Servings)

Ingredients:

  • Two boneless-skinless chicken breasts
  • 2 Tbsp Dijon Mustard
  • 1 Tsp Curry Powder
  • 2 1/2 Tbsp Honey
  • 3 Tbsp Butter, Melted
  • salt and pepper to taste

Directions:

  1. Mix all the sauce ingredients until smooth. Pour over the chicken and broil at 500F.
