Roasted Sweet Potato Soup with Smokey Croutons and Greek Yogurt

What better way to enjoy the Fall weather than with a warm bowl of sweet potato soup? A lot of sweet potato recipes go on the sweet side but this recipe heads in the savory direction. There’s no added sugar or sweeteners which is refreshing because sweet potatoes are sweet (duh) as it is! All you need is some spicy flavors to contrast with the potato’s flavor. The soup is flavored with turmeric and smoked paprika, along with the smokey croutons and creamy greek yogurt. I really liked the contrast between the crunchy croutons and the soup. I garnished the soup with greek yogurt and cilantro. Lime and honey are also optional garnishes. I will definitely be making this a lot on the colder days this season!

Sweet Potato Gnocchi with Brown Butter and Sage

Italian food is great with fine ingredients and simple flavors. Butter and sage, two simple ingredients on their own, make an excellent gnocchi sauce. Gnocchi is a type of potato dumpling pasta–it reminds me of a cross between polish Perogies and ravioli pasta. Gnocchi is usually made with white potatoes but I decided to try sweet potatoes for a more savory flavor. The sage fries in the butter as it browns which smells and tastes great.

As for the gnocchi making process it was surprisingly easy. The only thing to watch out for is overcooking the gnocchi. It really only needs 3 minutes and should be immediately scooped out when it floats to the top. I learned this the hard way by overcooking it by about 2 minutes which created a slimy bunch that was totally gross. I thought this recipe turned out really great, and I will be making this again–perhaps with pumpkin the next time to mix things up.

Sweet Potato Wedges

Sweet potato fries are such a great way to eat your beta-carotene!  I love the beautiful color of sweet potatoes and their flavor made these fries seem more like a dessert.  They were easy to prep and cook, but make sure to keep an eye on them because they do burn more easily than regular potatoes.  As with regular fries, I like to broil them the last few minutes of cooking to get that extra bit of crispiness on the outside.
