Roasted Beets

Roasted Beets are both beautiful and delicious. I used to eat them like candy when I was a kid. Roasting the beets concentrates their flavor so they’re great to eat as is. You can also add spices like ground clove and allspice for a little different flavor.


Roasted Beets
(Makes 7+ Servings)

Ingredients:

  • 5 or 6 Beets
  • several tablespoons olive oil

Directions:

  1. Preheat the oven to 375F.B Chop off the beets’ stems, and wash them thoroughly.
  2. In a shallow pan or dutch oven, rub the beets all over with olive oil. Cover with tin foil.
  3. Roast for 50-60 minutes or until tender. Remove the skins.
