Cilantro and Lime Broiled Chicken

I was originally going to make this post as a part of the chicken fajita recipe, but decided it really should be a post of it’s own. I love this marinade because it makes the chicken so tender and flavorful. It goes great on the grill too.


Cilantro and Lime Broiled Chicken
(Makes 2 Servings)

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 orange (juice)
  • 1 yellow lime (juice)
  • 2 cloves garlic, minced
  • handful of cilantro, chopped
  • 1 jalapeno, seeded and chopped
  • 1 tbsp cumin
  • 1 tsp paprika
  • salt and pepper to taste

Directions:

  1. In a dish, pat the chicken with the cumin and paprika. squeeze in the orange and lime juice. mix in the cilantro, jalapeno and garlic. Let marinate for 1-2 hours in the fridge.
  2. Broil at 500F
