Roasted Cajun Chicken

There are a lot of Cajun chicken recipes on the internet but I thought I would try making up my own wet rub.  I thought the chicken turned out tasty–it was very juicy and tender. The rub was spicy and savory and I was quite happy with the results. I made some potato fries with the chicken and they were both pretty good together. I have a lot of leftover chicken so I think I will try making some chicken quesadillas out of it too.


Roasted Cajun Chicken
(Makes 4+ Servings)

Ingredients:

  • 1 whole chicken
  • 1/4 c. olive oil
  • 1 tbsp. apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 2 cloves garlic, chopped
  • 1/2 tsp. cinnamon
  • 3 tbsp. paprika
  • 2 tsp cayenne
  • 1 tsp allspice
  • 1 tsp sage

Directions:

  1. In a bowl, mix all the spices together and in a separate bowl mix the liquids together. Whisk in half of the blend into the oil mixture.
  2. Wash the chicken and pat dry.
  3. Pour the rub all over the chicken, and pat it down with the dry spices.
  4. Cover loosely with tin foil and cook in a preheated 375F oven for 1 1/2 – 2 hours.
