Nutella Pumpkin Bread

If you like pumpkin and chocolate you just might like this recipe which combines two great flavors into one delicious bread.  The bread is also seasoned with nutmeg, cinnamon, cloves, and ginger which produces amazing aromas in the kitchen as the bread bakes.  The chocolate hazelnut flavor from the nutella and the pumpkin puree mixes well together, creating an excellent fall bread recipe.  I mixed the batter well, resulting in a dark brown batter.  Another option is to fold in the nutella at the end, creating a swirl of chocolate in the middle.

Pumpkin Soup with Pancetta and Sage

This soup is surprisingly easy to throw together and it creates such a delicious aroma in your house! The smell of pancetta and sage slow cooking for hours is how I think a kitchen should smell when it’s cold and damp during the Fall season.  You could easily use canned pumpkin or make the pumpkin puree yourself with this soup.  Also, substituting any kind of tasty winter squash would work well with this recipe.  After dicing up the veggies and pan frying the onion and pancetta, you can sit back as the soup simmers for several hours on low heat.  I garnished the soup with a little crispy fried sage and toasted pumpkin seeds.

Lentil Stew with Italian Sausage and Spinach

I wanted to kick off October with a good fall soup and lentil stew is a perfect fall and winter dish that is both hardy and healthy.  I had never tried cooking Italian sausage in a soup before and I was happy with the results.  The sausage became very tender through the slow cooking process.  This stew is simply seasoned with bay, oregano, and balsamic vinegar.  The balsamic vinegar gives a nice depth of flavor and the acidity is very nice.  The recipe could be prepared over the stove in a sauce pot instead of a slow cooker, just cook it for 2-3 hours on low. The spiciness of the sausage flavored the broth wonderfully and all this soup really needs is a thick crusted bread to accompany it.

Pumpkin Bread with Dried Cranberries and White Chocolate

Since September has arrived I have been searching for a more fall inspired bread recipe.  This recipe is a perfect fall bread and has so many good flavors.  The pumpkin flavor and spices can clearly be tasted along with the delicious addition of cranberries and white chocolate chips.  The white chocolate chips melted into the bread during baking so I might try a larger, white chocolate chunk next time.  The bread was nice and moist and the pumpkin spice highlighted the flavors of the pumpkin puree.  The aroma during baking was amazing and I can’t wait to have this for breakfast the next coming week!

Gingersnap Cookies

I love gingersnaps but they are often a very crunchy, hard cookie. I like a soft gingersnap so I decided to try them myself. They turned out much softer than I had anticipated which was great. I like a lot of ginger flavor so I was pretty liberal with the powder. For a little variety you can throw in a teaspoon orange zest or a drop of orange extract to change things up. This is a very soft and savory cookie recipe for the holidays!

Turkey and Wild Rice Soup

After Thanksgiving, it is a tradition in my family to take the carcass of the turkey and boil all the leftovers down to make a soup. The flavors of this soup were very good and the broth was excellent because it simmers for a few hours. I had some leftover brown rice so I threw that in with the wild rice. You can always make it with thick egg noodles instead. It’s sad to throw out the picked over chicken or turkey and not use it for anything–with this recipe there is no waste. This recipe also works very well with the leftovers of a whole roasted chicken.

Chipotle Corn Chowder

This is not the typical creamy corn chowder but a spicier, smokier corn stew. Unfortunately the season for good, fresh ears of corn has passed so I settled with store-bought bags of sweet corn. This recipe is perfect for sweet corn season and makes a great summer/fall soup. A fresh jalapeno is a good flavor addition to the smokey chipotle chili powder. I had some green bell peppers so I added those in for some extra veggies. I balanced the spiciness by adding sour cream and cilantro for garnish.
