Blackberry Lemon Quick Bread

Ingredients

  • 1/3 cup melted butter
  • 1/2 tsp vanilla
  • 1 1/2 cup blackberries
  • 1/4 cup sour cream
  • 1 tsp lemon zest
  • 1/4 cup brown sugar can increase to 1/2 cup if desired
  • 1/4 cup white sugar can increase to 1/2 cup if desired
  • 1/2 tsp cinnamon
  • pinch salt
  • 1 tsp baking soda
  • 1 egg
  • 1/2 cup wheat flour
  • 1/2 cup all purpose flour
  • 1/2 cup rolled oats and 1 tsp for sprinkling on top

Instructions

  1. Preheat the oven to 350F.
  2. Mash the blackberries with the melted butter.
  3. Mix in the sugars, egg, cinnamon, vanilla, sour cream and lemon zest.
  4. Sprinkle baking soda over the mixture.
  5. Add the flours, rolled oats and salt. Mix until just combined.
  6. Pour the mixture into a greased loaf bread pan.
  7. Sprinkle the top with the rolled oats.
  8. Bake for about 45 minutes, checking with a toothpick to make sure it's done. Let cool on a rack.
