Banana Oatmeal Bread

Ingredients

  • 4 ripe bananas mashed
  • 1/3 cup butter melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp vanilla
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 cup white flour
  • 1/2 cup whole wheat flour
  • 1/2 cup rolled quick oats plus a little more for sprinkling on top
  • 1 egg
  • pinch salt

Instructions

  1. Preheat the oven to 350F.
  2. Mix the butter into the mashed bananas in a large mixing bowl.
  3. Mix in the sugar, egg, spices, and vanilla.
  4. Sprinkle the baking soda and salt over the mixture and stir in.
  5. Add the white flour, wheat flour and oats and mix in.
  6. Pour the dough into a greased 4×8 inch loaf pan. Sprinkle the top with a little oats.
  7. Bake for about 1 hour or until a toothpick comes out clean from the center.
