Pimento Grilled Cheese Sandwich

Ingredients

  • 10 slices English Muffin or Buttermilk bread
  • 4 oz pimientos
  • 8 oz Cream Cheese room temperature
  • 4 oz sharp cheddar cheese shredded
  • 8 oz smoked Gouda cheese shredded
  • 2 tbsp mayonnaise (and more for the bread)
  • salt to taste
  • 1 tsp black pepper
  • cayenne optional

Instructions

  1. Combine with a hand mixer or paddle attachment, the cream cheese, mayonnaise, cheddar and gouda. Blend until smooth.
  2. Stir in the pimentos and cayenne (if using), taste and adjust to add salt and pepper.
  3. Smear one side of the bread with a little mayo and grill each sandwich until the bread is golden brown and the cheese has melted.
